So these Indian-inspired fig bites are probably my favorite recipe I’ve come up with so far. Besides having a bit of my heart devoted to India through my travels, I’ve been cooking Indian food since I was in graduate school. I love all the spices and flavors and it’s the perfect cuisine for someone who minimizes or doesn’t eat meat because there are so many different options using veggies, lentils and other legumes and grains.
You can find recipes these days all over the place for different energy bites, balls and bars – I have a whole board on Pinterest devoted to them. My other favorite recipe for No-Bake Cacao Chip Energy Bites is delicious, but includes some added sugar in the form of coconut nectar, honey or agave. I wanted to switch that up and make the fig and other flavors the stars without the needed for added sugars. The figs are a great source of fiber, potassium, vitamin B6, copper, manganese and pantothenic acid. A touch of fresh orange juice and zest add a little more sweetness with a bonus of vitamin C.
They’re super delicious and super quick and easy to make. So whip them up and store them in the fridge for whenever you want a treat… if they last very long.
