I don’t know about you guys, but I’m ready for summer. Mother Nature keeps showing us who is boss, however, and this last week in NYC has been rainy and cold, forcing me to pull out my tall boots. Don’t get me wrong – I love my boots (especially paired with a dress, leggings or skinny jeans) – but my sandals are starting to feel neglected.
One way I’ve found to soften the blow is to eat foods that harken the coming of warmer weather, barbeques and picnics. For a lighter, yummy and healthy alternative to beef burgers, I’m a fan of salmon. Often times people make salmon burgers more like cakes or croquettes using canned and ground salmon with fillers such as bread crumbs and flour. Since I like mine to have the consistency of a burger, I often go with fresh (wild-caught) salmon and kept the fillers out. This leads to a tasty and nutritious patty full of heart-healthy and anti-inflammatory omega-3 fatty acids. The addition of Mango and Avocado Salsa brings an added punch of tropical flavor with even more healthy fats and fiber. Plus, there’s cilantro, which I believe belongs in the other often left out but critical food group of spices and herbs.
So make these burgers and eat them solo, on a salad, on a bun, or wrapped in lettuce or other greens. I’m a personal fan of the lettuce wrap, but you do you :)
